Here is a super simple & quick recipe for my go-to fig prosciutto arugula salad that’s become a fast favorite at our house. It’s so refreshing, especially during these hot Arizona summer days.
WHAT YOU NEED
- 6 Figs
- Arugula
- Prosciutto
- Fresh cracked pepper
- Olive oil
- Fig infused balsamic vinaigrette
- Trader Joe’s Shaved parmesan, romano & asiago cheese (the best)
SERVINGS: 2 people
WHAT TO DO
- Slice the figs.
- Lay a bed of arugula on a serving dish.
- Add torn pieces of prosciutto and sliced figs.
- Drizzle a generous amount of olive oil over everything.
- Drizzle balsamic vinaigrette over everything.
- Add fresh cracked pepper.
- Top with shredded cheese mix.
Tip: After plating our salads, I place them back in the fridge for a while to chill them before serving. You can chill your spoons, too, like nice restaurants.
